Ingredients

  • 8 mini bell peppers

  • ½ cup white bean dip or hummus

  • ¼ cup crunchy chickpeas

Directions

Slice 8 mini peppers in half lengthwise; scoop out seeds and discard. Fill each half with 1½ teaspoons white bean dip (or hummus). Top each with crunchy chickpeas (about 3 or 4 each).
