Coat a 24-cup mini-muffin tray with cooking spray. Whisk all-purpose flour, whole-wheat flour, baking powder, baking soda, cinnamon and salt together in a medium bowl. Whisk buttermilk, butter, 1 tablespoon brown sugar and vanilla in a medium bowl until combined. Gently fold the buttermilk mixture into the flour mixture until just combined. Place 1 banana slice atop the sugar in each cup. Spoon batter evenly over each banana slice, about 1 heaping tablespoon per cup. Bake until lightly browned and a wooden pick inserted in the center comes out clean, 10 to 12 minutes. Let cool in the pan for 5 minutes. Run an offset spatula around the edges of each bite to loosen, then gently turn the pan upside down to remove the bites. Transfer to a platter, banana-side up.
