Marry me chicken is a trendy, comforting dinner–and it's worth the hype. Featuring chicken cutlets nestled in a creamy sun-dried tomato sauce, the main dish gets its name because it’s so good, the person you make it for might want to marry you right after they devour their plateful. For Demi Lovato, this holds true as the star loves making this dinner—and she is now engaged. Coincidence? We think not, and neither does the pop star. “It’s one of my favorite chicken recipes, and I think it worked because I’m getting married!” Lovato exclaimed at the start of her Instagram video, a part of her Cooking with Demi social series. Here’s how to whip up the one-pan meal—plus fitting sides and more versions you’ll want to make ASAP. Valerie Bertinelli's Favorite Vinaigrette Is So Good, It Makes Me Want a Salad Every Day Inspired by the recipe by Little Sunny Kitchen, Lovato listed her ingredients as follows: 3 large chicken breasts, boneless and skinless, sliced lengthwise into thin cutlets½ teaspoon salt¼ teaspoon ground black pepper6 tablespoons all-purpose flour2 tablespoons olive oil2 tablespoons unsalted butter3 cloves garlic, minced1 cup chicken stock1 cup heavy cream½ cup parmesan cheese, grated1 teaspoon chili flakes¼ teaspoon oregano¼ teaspoon thyme⅓ cup sun-dried tomatoes, chopped1 tablespoon fresh basil leaves After slicing the chicken into thin cutlets, she lightly seasons each cutlet with salt and pepper. Because the sauce is so flavorful, a ton of seasoning isn’t required. Then, she coats the chicken with flour. “When you sear it, it’s got a nice crisp to it,” Lovato explains as she pats flour onto each cutlet. In a pan with olive oil and butter on medium heat, Lovato adds her chicken—admittedly, she burns the first one, and we love the honesty as it happens to all of us. Browning the chicken should take 4 to 5 minutes on each side. After browning, Lovato sets her chicken to the side to make the cream sauce in the same pan. She adds in minced garlic, chicken stock, heavy cream, chili flakes, oregano, thyme and sun-dried tomatoes in the hot pan and lets it simmer. Finally, she puts her chicken back into the pan for a few minutes to soak up the sauce before plating.
