Salads are always good. I’m big on them, especially in the summer. My husband, Carl, likes salads year-round, and I can do a good salad whether it’s using all sorts of vegetables or just one. There’s nothing better than a summer garden salad, and this is a great one. And it’s even better if you can make it the day before, so all the tastes and flavors can combine. Just give it a good stir before serving.

Ingredients

Dressing

  • 1 cup mayonnaise

  • 2 tablespoons cider vinegar

  • 3 tablespoons powdered sugar

  • 1 teaspoon salt

  • 1 teaspoon pepper

Salad

  • 8 cups broccoli florets, or 1 large head broccoli, cut into bite-size pieces

  • 1 medium sweet onion, chopped

  • ½ cup raisins

  • ½ cup coarsely chopped raw pecans

  • 6 slices (about ½ pound) bacon, cooked and chopped

Directions

  1. To make the dressing, in a medium bowl, whisk together the mayonnaise, vinegar, powdered sugar, salt, and pepper and set aside.

  2. To make the salad, in a large bowl, combine the broccoli, onion, raisins, pecans, and bacon. Drizzle with half of the dressing, stirring until well combined. Add the remaining dressing and mix thoroughly. Cover and refrigerate at least 1 hour or overnight.
